Tex Mex Salad Roll-Up Bites

We worked with registered dietitian, Beth Stark, RDN, LDN, to create these bite-sized salad roll-ups that are perfect as a packable lunch or a quick after school snack. This recipe uses simple ingredients often found in your fridge to make it an easy go-to in a pinch!

Ingredients

  • ½ cup BrightFarms® Sunny Crunch®, shredded 
  • 1 (8-inch) whole-wheat tortilla 
  • ¼ cup no salt added black beans, drained and rinsed 
  • ¼ ripe avocado, peeled, pitted and mashed 
  • 2 tbsp natural shredded sharp cheddar cheese or shredded plant-based cheese 
  • 2 tbsp jarred salsa 
  • 1 tbsp refrigerated organic ranch salad dressing or dip 

Recipe preparation

  1. Place black beans on tortilla and gently mash with a fork, leaving a half-inch border around the edge. 
  2. On one side of the tortilla, add mashed avocado, BrightFarms® Sunny Crunch®, shredded cheese, salsa and ranch. 
  3. Roll up tightly, cut into bites and serve or place into a resealable container for lunch to go. 
Special Instructions

Sub extra avocado for cheese and a vinaigrette dressing to make it vegan!
