Place sliced onion in a bowl of cold water. Let sit while you prepare the rest of the salad to remove some of the harsh taste of the onion.
In a blender, add all dressing ingredients except olive oil and blend on high speed until smooth. Add olive oil and blend until dressing thickens. Add additional water if too thick. Season with additional salt & pepper if necessary. Transfer to mason jar to keep for up to 2 days in the refrigerator.
In a large bowl, add Spring Mix. Top with strawberries, feta cheese, almonds and red onion.
Add dressing and toss. Serve!
