Ingredients

  • 4 oz BrightFarms ® Spring Mix
  • 1 cup of cooked rice or grain of choice
  • ¼ cup roasted sunflower seeds
  • 2 portobello mushroom heads
  • 1 beet
  • ½ block tofu
  • Olive Oil
  • Sesame Oil
Miso Dressing
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp mirin
  • 2 tbsp miso

Recipe preparation

  1. Slice the mushrooms and beets. Place the mushrooms in a pan with olive oil to sauté. Place in a large bowl when done.
  2. Press the tofu to remove moisture and cut into cubes. Place the tofu in the same pan with added sesame oil. Cook on all sides until golden brown.
  3. In a small bowl, add the soy sauce, olive oil, mirin, and miso. Whisk to combine.
  4. In the large bowl, assemble the BrightFarms Spring Mix, rice, beets, and tofu. Top with sunflower seeds and dressing to serve.
