Is it just us or do Fall flavors really make for the best salads. This recipe features crisp apples, crunchy walnuts, and savory butternut squash in a salad that showcases the best of the season, all-year-round!

Ingredients

  • 1 package BrightFarms® Harvest Crunch ® 
  • 1 small butternut squash, Roasted 
  • 1 pink lady apple 
  • ½ cup shelled walnuts, chopped 

Sweet Citrus Dressing 

  • ¼ cup extra virgin olive oil 
  • 2 tsp fresh lemon juice 
  • 1 tsp fresh lime juice 
  • 2 tsp orange juice 
  • ½ tsp maple syrup 

Recipe preparation

  1. Peel and cube butternut squash. Toss with olive oil, salt and pepper. 
  2. Roast for 30 minutes at 425 degrees on a parchment lined baking sheet. 
  3. Chop apples and walnuts. Place in large salad bowl with BrightFarms® Harvest Crunch. 
  4. When squash has cooled, add to bowl. In a small bowl combine citrus dressing ingredients and stir to combine. 
  5. Drizzle dressing over salad, toss and serve. 
Special Instructions

Swap out walnuts for your favorite nut. Have other root vegetables that you are looking to use? Swap them for the butternut squash!
