Ingredients

  • 8 oz. BrightFarms® Baby Spinach 
  • 2 cups of fresh watermelon, cut into bite sized chunks 
  • ½ cup of feta cheese 
  • 1 cup of red onions, thinly sliced 

White Balsamic Vinaigrette 

  • 3 tbsp of extra-virgin olive oil 
  • 2 tbsp of white balsamic vinaigrette 
  • Salt & pepper to taste 

Optional: Pine nuts and fresh mint to garnish 

Recipe preparation

  1. Add spinach to a salad bowl. 
  2. Prep watermelon and onions and add to bowl. 
  3. Add all vinaigrette ingredients into a mason jar and shake well. 
  4. Pour dressing over salad, toss and serve! 
Special Instructions

Sub avocado for feta cheese to make this salad vegan.
